- 4 medium sweet potatoes
- olive oil
- 2 sprigs of rosemary (finely chopped)
- 1 small bunch of parsley (finely chopped)
- 4 cloves of roasted garlic (finely chopped)
- sea salt
- Peel sweet potatoes and slice into desired fry shapes.
- Toss in 2 tbsp of olive oil, rosemary, salt and pepper.
- Place on a baking sheet, spread apart to cook evenly.
- Bake fries for 1 hour at 375 degrees.
- Remove fries from the oven, sprinkle with roasted garlic and parsley.
